    Potato Hash with Sausage and Eggs

    Hello! If I can eat any type of meal all day, it would be breakfast. Breakfast dishes are my favorite type of meals any day, all day! Anyone else?
    Maybe because potatoes are one of my favorite ingredients to eat, I enjoy potatoes cook in many ways. So combine one of my favorite foods in my favorite type of meal and I can eat that all day.
    Breakfast or Any Meal of the Day?
    This potato dish is loaded with veges and protein. I added sausages but this can be left out or substituted with any protein of your choice.
    I also added green bell peppers and a bunch of onions. So this meal includes the veges and protein that will fulfill your appetite all day.
    When I eat a full breakfast meal like this, I feel fuller and reach for my next meal later.
    Easy to Substitute with Veges
    Just like any of my recipes, the protein and the veges can be replaced with any other ingredients of choice.
    The seasonings and the flavors are very simple so it can be easily paired with other breakfast items. Don’t forget to top off with your favorite style of egg!
    Let’s not forget about the aromas of the garlic with onions on the potatoes. Can anyone else agree that potatoes cooked in any way just smells sooo delicious?

    Ingredients

    Adjust Servings
    0.5 bell pepper of choice (diced)
    0.5 onion of choice (diced)
    2 garlic cloves (minced)
    1 sausage of choice (diced)
    2 medium potatoes choice (cubed)
    1 teaspoon of oil of choice
    1 large egg
    1 tablespoon of butter
    1 teaspoon of paprika (optional)
    Salt and pepper to taste

    Directions

    1.

    Oil on heat:

    Add oil to a large non-stick pan over medium heat.
    Mark as complete
    2.

    Heat it up:

    When the oil is hot, add the potatoes and sausages.
    Mark as complete
    3.

    Other ingredients:

    After about 2 minutes, add the onions, bell peppers, and garlic. Mix ingredients together well.
    Mark as complete
    4.

    Season it:

    Add salt, pepper, and paprika to taste.
    Mark as complete
    5.

    Stir it:

    Stir frequently until the potatoes and onions are soft, tender, and lightly browned. Remove from heat when cooking texture is reached. Mine was about 5 minutes later.

    Egg up:

    In a separate heated pan, add the butter and crack the egg into the pan. Cook the egg to desired taste. Mine was about 5 minutes for a runny sunny side up egg.

    7.

    Plate up:

    Spoon the cooked potato hash onto a plate and top with egg.
    Mark as complete
    8.

    Enjoy!
