Ingredients

1 pound of cauliflower rice | |
1 teaspoon of sesame oil | |
1 tablespoon of olive oil | |
1 medium carrot | |
0.25 diced red or white medium onion | |
3 minced garlic cloves | |
1 pound peeled and deveined shrimp | |
0.25 cup of peas or to taste | |
2 green onions sliced (save some for garnish) | |
2 medium eggs | |
1 tablespoon of soy sauce | |
Salt and pepper to taste |
Directions

Turn up the heat:
Heat the olive oil in a large skillet, pan, or wok.

Mix the ingredients:
Add all the shrimp, onions, carrots, and garlic to the pan. Sautée for about 3 minutes, until the shrimp is pink and the onions are soft.

Rice time:
Add the cauliflower rice and mix until the cauliflower is warmed through.

'Tis the season:
Season with salt, pepper, and soy sauce to taste. Mix thoroughly to combine all the ingredients.

Add the peas. Mine are frozen, so I added them at this point.

Create a well:
Move the cauliflower mixture to the sides of the pan to create a well in the center.

Beat it:
Then pour the beaten eggs and scramble in the well. Once the eggs are almost fully cooked, mix everything together.

Add the green onions and sesame oil. Combine everything together and cook for another 1-2 minutes.
