    Hawaiian BBQ Chicken

    15 minutes prep, 2 hours to marinate

    Hello! I am back with another Hawaiian inspired dish. This time I took home the taste of their delicious BBQ flavors right into my kitchen.
    This marinade sauce is so easy, I whipped it up in a few minutes in between Zoom calls!

    Easy and Delicious Main Dish

    I used boneless chicken thighs as my source of protein in this dish but any choice of meats can easily be substituted.
    I think that is what is so great about barbecue marinade and seasonings; they can be used on any dish. And my family loves a good BBQ dish.

    Crowd Pleaser

    I have a big secret to reveal about my wife though, she does not like BBQ much. That is unheard of, right?! Who doesn’t love BBQ??
    I am such a huge BBQ griller, smoker, you name it. I love all things related to BBQ. But do you know how I please the BBQ naysayers? I make extra good side dishes. But that is for a different time.
    Despite her dislikes, my wife thoroughly enjoyed this BBQ chicken. The sweetness of the ketchup and the soy sauce had a pleasant fusion of flavors with the grilled charred flavor.

    Ingredients

    Adjust Servings
    2 pounds of boneless chicken thighs (or meat of choice)
    3 garlic cloves (minced)
    0.25 cup of soy sauce
    0.25 cup of mirin (or sherry)
    0.25 cup of ketchup
    1 tablespoon of rice wine vinegar (or white vinegar)
    1 teaspoon of sesame oil
    1 tablespoon of cooking oil

    Directions

    1.

    Marinade time:

    In a large mixing bowl, combine the 3 minced garlic cloves, 1/4 cup of soy sauce, 1/4 cup of mirin, 1/4 cup of ketchup, 1 tablespoon of rice wine vinegar, and 1 teaspoon of sesame oil. Mix well.

    Marinate it:

    Pour the marinade over the chicken meat and cover with wrap. Place the chicken in the refrigerator for a minimum of 2 hours. Marinating the meat overnight in the refrigerator is preferred to get maximum flavor.

    Grill time:

    In a heated pan or grill, cook the chicken for about 7 minutes on each side (depending on your cut of meat) or until the internal temperature reaches 165 degrees.

    When the chicken is done cooking, serve with your favorite sides.
