    Cauliflower Shrimp Fried Rice

    Rice is a staple in my household, sometimes 2 bowls per person is the minimum because we love it that much! But we have been consciously lowering our grain intake lately just to eat a little healthier.
    I admit it was definitely hard not to eat rice twice a day. We started looking for rice substitutes to satisfy our craving and stumbled upon the cauliflower rice at Trader Joe’s. Who doesn’t love Trader Joe’s??
    Cauliflower That Tastes Good!
    Their one pound bag of cauliflower rice was perfect for us. We mixed the cauliflower with our usual fried rice ingredients and these vegetables are always available in our refrigerator.
    You can add or substitute any of these ingredients included but we love to add carrots, peas, and onions for flavor and texture. You can remove the carrots and peas to lower the carbs even further.
    Easily Add Any Veges.
    However, no fried rice is complete with out the umami flavor – soy sauce. You can substitute the soy sauce for coconut aminos (also available at Trade Joe’s!).
    This fried rice came out just the way we hoped. It was quick, delicious, and full of flavor.
    And although this wasn’t the typical fried “rice”, all the loaded veges was surprisingly just as filling to last us to our next meal. And the veges were cooked tender enough where the texture was as soft as rice.
    Definitely a must try for vege lovers or those looking to lower their carb intake!

    Ingredients

    Adjust Servings
    1 pound of cauliflower rice
    1 teaspoon of sesame oil
    1 tablespoon of olive oil
    1 medium carrot
    0.25 diced red or white medium onion
    3 minced garlic cloves
    1 pound peeled and deveined shrimp
    0.25 cup of peas or to taste
    2 green onions sliced (save some for garnish)
    2 medium eggs
    1 tablespoon of soy sauce
    Salt and pepper to taste

    Directions

    1.

    Turn up the heat:

    Heat the olive oil in a large skillet, pan, or wok.
    Mark as complete
    2.

    Mix the ingredients:

    Add all the shrimp, onions, carrots, and garlic to the pan. Sautée for about 3 minutes, until the shrimp is pink and the onions are soft.
    Mark as complete

    Rice time:

    Add the cauliflower rice and mix until the cauliflower is warmed through.
    Mark as complete
    4.

    'Tis the season:

    Season with salt, pepper, and soy sauce to taste. Mix thoroughly to combine all the ingredients.

    More veges:

    Add the peas. Mine are frozen, so I added them at this point.
    Mark as complete

    Create a well:

    Move the cauliflower mixture to the sides of the pan to create a well in the center.
    Mark as complete
    7.

    Beat it:

    Then pour the beaten eggs and scramble in the well. Once the eggs are almost fully cooked, mix everything together.
    Mark as complete
    8.

    More yummy ingredients:

    Add the green onions and sesame oil. Combine everything together and cook for another 1-2 minutes.
    Mark as complete
    9.

    Enjoy!
